A new breakfast and lunch option has opened up to those in and around Journal Square that uses not only local fresh produce, but local aspiring chefs as well. Rick Low of the Culinary Cafe at the Culinary Conference Center has a new spot open only on Tuesdays and only for breakfast and lunch but it offers more than just menu fare, it offers young chefs the ability to set a menu, use locally grown and fresh produce and run a restaurant if only for a day.
Said Low on his students:
"They wrote bios. They designed their own menu. I let them order their own food, project food cost. We got a lot of response from the community and the students really liked it."
So why not support local food and local talent? Besides, doesn't rosemary beef stew, orange glazed Cornish game hen, cinnamon roasted baby pumpkin and seasonal vegetables sound better than White Castles?
